Spicy Miso Brothy Chicken Bowl

This spicy miso brothy chicken bowl brings together real ingredients, succulent chicken and comforting broth for a fuss-free weekday dinner! Proof that bone broth belongs in your dinner, not just your mug.

Ingredients:

Chicken Marinade

    Spicy Miso Broth

      To Serve:

      • Rice of your choice (cooked with Best of the Bone Original Bone Broth Concentrate)
      • 1 carrot, sliced
      • 1 red capsicum, sliced
      • 1 pak choy, halved
      • 1 red chilli, sliced
      • Handful coriander
      • Mingle Everything Bagel Seasoning
      • Chilli oil (optional)
      • Fresh lime (juice)

      Method:

      1. Prepare rice according to packet instructions, adding 1 tablespoon of Best of the Bone Original Bone Broth Concentrate to the cooking water.
      2. In a bowl, combine grated ginger, soy sauce, miso bone broth concentrate, honey, and chilli flakes. Mix well. Add the chicken thighs and coat thoroughly. Let sit for at least 30 minutes (longer if you’ve got the patience).
      3. In a large pot, heat the red curry paste with a small drizzle of olive oil over medium heat for about 1 minute, until fragrant. Add coconut cream and miso bone broth concentrate, and water. Stir to combine, then let it simmer for 10–15 minutes, add more water to loosen sauce up if needed. 
      4. Heat the beef tallow in a pan over medium-high heat until melted. Add the chicken thighs and cook for 7–9 minutes on one side until caramelised and slightly crispy. Flip and cook until done through and equally golden on the other side. Remove from heat and slice into thin strips.
      5. Slice the carrot, capsicum, pak choy, chilli, and coriander. Lightly steam until just tender. You want them cooked, not lifeless.
      6. Add rice to a bowl, top with sliced chicken and steamed vegetables. Pour over the red curry broth, then finish with chilli, coriander, a drizzle of chilli oil (if using), a squeeze of lime, and a sprinkle of Everything Bagel seasoning.
      7. Serve hot. Eat immediately. Bone broth, just doing what it’s always done, only now it’s in your dinner bowl.
