Nourishing Chicken Bone Broth Bowl
The kind of dinner you want when you’re feeling a little under the weather, need some extra nourishment or just want something cosy and comforting in 30 minutes!
Ingredients:
- 2 chicken breasts
- 1/2 cup jasmine rice
- 1 cup water
- Pinch salt
- 1L chicken bone broth
- 1 shallot, very finely diced
- 1 carrot, very finely diced
- 2 garlic cloves, finely chopped
- 2 sprigs fresh thyme
- 1 bay leaf
- 1/2 tsp freshly cracked black pepper (to taste)
- 1-2 handfuls baby spinach
- Salt to taste
- Squeeze of lemon juice to finish
To Serve:
Optional: Top with chilli oil
Method:

Cook your rice: add jasmine rice, water and a pinch of salt to a saucepan. Bring to the boil, cover and reduce to low. Cook for around 12 minutes, then remove from the heat and leave covered for 5 minutes before fluffing.

Make the broth: add chicken bone broth, finely diced shallot, carrot, garlic, thyme, bay leaf and black pepper to a large saucepan. Bring to a gentle boil and taste, adding a little salt if needed.

Add the chicken breasts to the broth and bring back to the boil. Once boiling, remove from the heat, cover with a lid and leave to poach for around 20-25 minutes, depending on the size of your chicken breasts.

Remove the chicken from the broth and slice or shred. Bring the broth back to a gentle simmer and stir through the baby spinach until just wilted. Remove the thyme and bay leaf.

Finish the broth with a generous squeeze of fresh lemon juice and adjust the seasoning to taste.

Add rice to a bowl, top with the sliced or shredded chicken, then pour over the chicken bone broth! Finish with chilli oil and enjoy!
