Mezze Platter

Best of the Bone x Gaga's Gut Loving Ferments Mezze Platter

Treat your gut to the benefits of broth, tallow and fermented foods with this colourful plate perfect for sharing!

Ingredients:

Lamb Koftas:

  • Grass-fed Lamb Mince
  • White Onion Diced
  • 2 Garlic Cloves Diced
  • 1 tsp Cumin Seeds
  • 1 tsp Cumin Powder
  • 1 tsp Coriander Powder
  • Sea Salt & Pepper
  • BOTB Beef Tallow

Flat Bread:

  • 1 ½ Cup Greek Yogurt
  • 3 Cups Self-Raising Flour
  • Salt
  • BOTB Beef Tallow

Tahini Garlic Yogurt:

  • ½ Cup Greek Yogurt
  • 1 Garlic Clove Diced
  • 1 tbsp Tahini
  • 1 tsp BOTB Bone Broth Original
  • Lemon Juice
  • Sea Salt & Pepper

Gut Loving Sides Toppers:

  • Gaga's Guts Sauerkraut
  • Gaga's Guts Ginger Beets Kraut
  • Rocket
  • Tomato, Red Onion & Sumac (or whatever’s in your fridge.)

 

Method:

  1. Using a medium-sized fry pan, gently fry off your diced onion in tallow. Once softened, add your diced garlic, cumin seeds, cumin, and coriander powders. Fry off for a few minutes until fragrant, then transfer the contents into a large mixing bowl.
  2. Add your lamb mince, season with salt and pepper, and mix everything well using clean hands until fully combined. Shape into small koftas (about palm length), then either thread onto skewers or leave as is, cover while you prepare the rest.
  3. For the flatbread, combine self-raising flour, Greek yogurt, a good pinch of sea salt into a large mixing bowl. Mix until a shaggy dough forms. Dust your clean bench with flour, and then knead the dough for a few minutes until smooth. Divide into 6–8 portions, roll into balls, then, using a rolling pin flatten into discs. Heat your fry pan and add tallow. Once melted and your dough and cook 2–3 mins each side until golden and puffed.
  4. Next, whisk together all tahini yogurt ingredients in a small bowl. Adjust salt, pepper, and lemon juice to taste. Add a splash of water if you want it thinner.
  5. Heat a fry pan or BBQ with a little more tallow and cook koftas over medium heat, turning occasionally, until golden brown and cooked through.
  6. Assemble your mezze plate with the koftas, flatbread, a generous dollop of tahini garlic yogurt, and your gut-loving toppings; Gaga’s Guts sauerkraut, kraut beets, fresh rocket, and a juicy tomato-onion-sumac mix or use up whatever you have in your fridge!
  7. Best served shared.
