Herb & Feta Baked Brothy Rice
The easiest, no-fuss side dish your summer spread has been begging for.
Fresh, crunchy, zesty — and quietly collagen-rich.
Perfect alongside grilled steak, fish or chicken.
Ingredients:
- 2 cups Basmati Rice
- 3 cups water
- 2 tablespoon Turmeric & Ginger Bone Broth Concentrate
- Half a coriander bunch, chopped
- 1 jalapeno sliced
- 150g Greek Feta
- Handful of pistachios, chopped
- Pickled red onion
- 1 lime
- Salt & Pepper
Method:

Preheat oven to 200°C fan-forced.

In an oven-proof tray or baking dish, add the rice, water, bone broth concentrate, salt, pepper and chopped coriander. Stir well to combine.

Cover tightly with foil and bake for 20–25 minutes, or until the liquid is absorbed and the rice is fluffy.

Remove from the oven and let rest for 5 minutes, then fluff gently with a fork.

Top with crumbled feta, pistachios, extra coriander, jalapeño and pickled red onion. Finish with a generous squeeze of fresh lime.
