Brendan's One Pot Cheat Chicken Rice
If you want something easy, comforting and packed with so much flavour, this is it…all done in one pot using Best of the Bone’s new Turmeric & Ginger Chicken Bone Broth Concentrate.
Chicken Rice:
- 2 tbsp vegetable oil
- 3 cloves garlic, finely chopped
- 1 tbsp ginger, finely chopped
- 2 spring onions, cut into 4 cm lengths
- 2 cups jasmine rice (or medium grain rice), rinsed
- 1 ½ tbsp Turmeric & Ginger Chicken Bone Broth Concentrate
- 2 cups water
- 3 boneless chicken thighs, skin on
- Salt and white pepper, to tast
Ginger Garlic Spring Onion Oil:
- 2 spring onions, finely chopped
- 1/2 tbsp ginger, minced
- 1/2 tbsp garlic, minced
- ½ tsp salt
- ¼ cup vegetable oil
To Serve:
- Cucumber, sliced
- Coriander
Method:
- Rinse the jasmine rice until the water runs mostly clear, then drain well and set
aside. Heat the vegetable oil in a pot over medium heat and saute the garlic, ginger
and spring onion for 1 - 2 minutes until fragrant. Add the rice along with the turmeric & ginger chicken bone broth concentrate and 2 cups of water, mixing well to dissolve everything evenly. - Season the chicken thighs with salt and white pepper, then place them directly on top of the rice. Cover with a lid and cook on medium–low heat for 20–22 minutes, until the rice is tender and the chicken is just cooked through.
- While that cooks, make the sauce by combining the spring onion, ginger, garlic and
salt in a bowl. Heat the oil until hot, then pour it over the mixture to release the
aroma and mix well. - Once the rice is cooked, let it sit for 5 minutes before slicing the chicken and gently fluffing the rice. Serve with plenty of the ginger garlic spring onion oil, cucumber and fresh coriander.
