Go-to lazy meal?
Frozen dumplings or wontons I keep on hand. Adding some BOTB broth turns it into a really comforting bowl with barely any extra effort.
One ingredient that instantly upgrades a dish?
Chilli oil. Adds heat, aroma, and a bit of richness. I put it on everything!
What’s always in your fridge?
Garlic, ginger, spring onion, soy sauce, eggs, jasmine rice — and always a jar of BOTB in the fridge to build flavour quickly.
Most underrated cuisine / favourite cuisine?
Mauritian food. It’s a mix of Chinese, Indian, and Creole influences. It’s super comforting and packed with flavour, but still quite under the radar.
What are you cooking when you want to impress?
Something that feels generous and made with care like handmade dumplings or a slow-cooked curry like a beef rendang.
Favourite song to listen to when cooking?
Usually something nostalgic like old school R&B or old-school throwbacks - Lauryn Hill, old school usher etc. Keeps things relaxed in the kitchen.
What happens when you swap stock for broth?
You get a deeper, more rounded flavour and a bit more body. Using something like BOTB gives you that slow-cooked home cooking taste without the time.
Where does broth shine the most?
Soups, rice dishes, braises, and also sauces — anywhere it can really soak into the dish and build flavour from the base up.
